Hey Guys,

There are about 4 City Chic dresses and all the gorgeous new active wear I want right now but the budget just isn’t allowing it! So in order to buy more clothes I’m cutting back on my other expenses. Food is one of my massive bills and I still want to eat delicious things, but I’m looking for cheaper ways to cook and still enjoy the food. This recipe for my beef fajita bowl only costs $2.45 per portion and it tastes just like the takeaway version I buy for $12. The recipe is for 4 portions so the leftovers get packed up and put into the fridge or freezer for future meals. 

2 cups jasmine rice
1 cup canned pinto beans, drained and rinsed
200g beef
2 tbsp fajita seasoning
1 punnet cherry tomatoes
1 cup cheese, grated  
1 small bunch coriander, roughly chopped
1 carrot
1 tsp oil

Bring a large pot of water to the boil, add rice and simmer until cooked, drain and keep warm

Coat beef in fajita seasoning 

Heat oil in a large saucepan and sauté beef until cooked to your liking

Allow the steak to rest for a few minutes and then slice 

Cut the tomatoes into halves or quarters 

Grate carrot

Assemble your beef fajita bowl in layers starting with rice 

Add beans

Add carrot

Add the beef

Add tomato

Add cheese

Add corriander

Serve with your favourite chilli sauce, avocado or corn chips for something a little extra.
