Cooking With Asha // Tomato and Chilli Prawn Pasta

 Hey Guys,

We’ve been having such beautiful weather and it makes me feel like having the girls over for a glass of wine, gossip, sunshine and yummy food. This delicious tomato and chilli prawn pasta is simple to prepare and perfect for a summer lunch with the girls!

375g dried pasta
4 cloves garlic
1 red chilli (or more depending how hot you like it)
20 medium prawns, peeled and deveined
6 medium tomatoes
2 tbsp parsley, chopped
2 tbsp extra virgin olive oil
Salt and pepper

Roughly chop tomatoes and finely chop garlic and chilli.

Heat oil in a large pan and sauté garlic and chilli for a few minutes or until they start to brown.

Add prawns to the pan and continue cooking until prawns are no longer translucent.

Meanwhile bring a large pot of water to the boil and cook pasta until andante.

Add tomato and half of the parsley to the prawns.

Drain the pasta and add to the prawn mixture. Toss through the pasta, season to taste and serve topped with extra parsley.

I didn’t have any parmesan in the house but this dish would be delicious with some cheese sprinkled over!
