Cooking With Asha // Rockmelon and Prosciutto Canapes

 Hey Guys,

I’m always looking for a good canapé recipe and with party season upon us what better time to share my rockmelon and prosciutto canapes with you. They’re really easy to prepare and taste amazing.

So next time you’re looking for a fast and easy dish to take to a party, try these rockmelon and prosciutto canapés, everyone will love them.

500g rockmelon
6 slices prosciutto
100g cream cheese
6 slices bread
Honey to drizzle
Salt and pepper

Remove skin and seeds from rockmelon and then slice lengthways into ribbons.

Toast the bread and spread generously with cream cheese. Season with salt and pepper.

Fold one piece of prosciutto and 2 slices of rockmelon together and arrange them on top of the toast.

Drizzle with honey, season with extra pepper and top with a few mint leaves.

I used slices of bread so they’re quite substantial, but for something a bit daintier try using crackers or cutting the toast into bite sized pieces before adding toppings.
