Cooking with Asha // Parfait



Hey Guys,

Parfaits are one of my favourite desserts because they’re really easy to make and you can use a range of different ingredients depending on what’s in season or what you have in your fridge. In this recipe today I’ll be using mascarpone cheese and cream for the base, but you could use Greek yogurt, cream cheese, quark for a high protein option, just cream or anything else you think would taste nice.

I’ve used a range of different fruits, muesli and a slice of gluten free banana bread I had left over.  But you could also add nuts, granola, chocolate, jelly or frozen berries. The options are endless but the one I’ve made today was seriously delicious!


Ingredients
1/3 cup mascarpone cheese
1/3 cup whipping cream
1 tbsp honey (optional, to sweeten cream)
1 punnet strawberries
1 mandarin
1 kiwi fruit
1/3 cup muesli


Place mascarpone, cream and honey in a bowl and whip until soft peaks form.


Chop fruit and smear strawberry jam on the banana bread before cutting into squares.


Assemble layers of fruit, cake, muesli and cream mixture in a class.
