Looking for a really easy and healthy mid-week meal? This beef and noodle salad is seriously fast to make and packed full of fresh vegetables and protein. The recipe for the dressing is passed down from my grandad and is an all-time favourite of mine. Zingy, fresh and delicious, this salad is a winner in my house for an easy mid-week meal!
500g sirloin steak
3 tbsp olive oil
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp crushed garlic
1 packet vermicelli noodles
¼ baby Chinese cabbage
½ red capsicum
Heat a frying pan and cook sirloin on one side for 4 minutes, turn over and continue cooking to your liking.
To make dressing add oil, vinegar, garlic, mustard and a generous amount of salt and pepper to a small bowl.
Whisk with a fork until all ingredients combine.
Put the kettle on to boil and place noodles in a bowl. Pour boiling water over noodles and allow to sit for 5-8 minutes or until cooked to your liking. Strain and set aside.
Finely slice vegetables and steak.
Combine noodles, dressing, steak and vegetables in a large bowl and toss to combine. Serve topped with a sprinkling of coriander.
