Ice cream is my weakness and I always feel like a huge bowl of it after dinner. I’ve been looking for a healthier option and tried this banana and strawberry recipe. The main ingredient is fruit so it’s still quite high in sugar, but I’d much rather be eating natural sugars than anything processed. It tastes really good too!
Banana and Strawberry Ice Cream
2 ripe bananas, peeled
½ cup strawberries, washed and trimmed
2 tbsp coconut cream
½ tsp vanilla essence
Honey to sweeten (optional)
Place fruit in the freezer until frozen (preferably overnight).
Chop bananas into chunks and put fruit in a food processor.
Blend for about 30 seconds, until it’s cut into small chunks.
Add coconut milk, vanilla and honey and blend until well mixed.
Serve immediately or store in the freezer.
If chocolate is your weakness, try adding some cocoa power for a delicious chocolate ice cream.
