I spend most of my time lifting super heavy weights, but I also have a massive love for animals! I’m the animal ambassador for RSPCA WA and this month we’re having Cupcake Day to raise money for the RSPCA and fight animal cruelty with cupcakes!

If you’re in WA come down this Sunday 17th August, 10.30am-2.30pm and enjoy some delicious cupcakes, coffee, doggy games, a raffle, live music, dog wash and much more! It’s being held at McCallum Park, Taylor St car park, South Perth foreshore (near the causeway).
Now all we have to do is get baking! Here’s my favourite step by step cupcake recipe for you to try.
Choc Chip Cupcakes
125g butter, softened
1 tsp vanilla extract
¾ cup caster sugar
1 ½ cups self-raising flour, sifted
½ cup milk
¾ cup choc chips
Preheat oven to 160°C and line a cupcake tray with patty pans
Using an electric mixer, beat butter, vanilla and sugar until light and fluffy. Add eggs, 1 at a time, beating after each addition.
Stir in flour and milk until combined. Stir in choc chips.
Spoon mixture into prepared pan. Bake for 25 minutes or until cooked through.
Turn out onto wire rack to cool completely then decorate them with your favourite frosting and decorations. I used a store bought butter cream for easy piping, choc chips and 100’s and 1000’s.
